Items used to make these peanut butter and jelly cookies

I have a few tried and true items that I used to make this peanut butter cookie recipe. These are some of my favorite go to kitchen items and I have included a link to them on Amazon to make them easier for you to locate.

  • 1 Hand Held Mixer this is a very affordable one and a great option if you do not have access to a stand alone mixer.
  • 2 Sheets of Parchment Paper is used by placing onto the cookie sheet instead of non-stick cooking spray. This parchment paper allows the peanut butter thumbprint cookies to be baked without sticking to the pan. And these come in pre-measured and pre-cut sheets.
  • 1 Medium Cookie Scoop this is my secret to creating uniform sized cookies. For this cookie recipe I scoop the cookie dough with the scoop and form it into a ball with my hands.
  • 2 Medium Sized Mixing Bowls these are very sturdy and stackable. And these mixing bowls come with lids, which is great for a recipe like this one that requires the dough to be chilled in an air tight container for an hour.

Step-by-Step Instructions for Making Peanut Butter Thumbprint Cookies

Now that you have gathered all the necessary ingredients, it’s time to embark on the journey of baking these delectable Peanut Butter Thumbprint Cookies. Follow these step-by-step instructions for a foolproof baking experience:

  • In a medium sized mixing bowl whisk together the all purpose flour, baking soda, and salt until all ingredients are combined. Set the mixture aside.
  • In a separate mixing bowl add the butter, peanut butter, granulated sugar, and light brown sugar. Mix the ingredients together using a hand held mixer for several minutes until they are completely combined and creamy.
  • Scrape down the sides of the bowl and add to the butter mixture the egg, milk, and vanilla extract and combine the ingredients together using a hand held mixer.
  • To the wet ingredients slowly add in the flour mixture in small increments, about a half a cup at a time. Scrape down the sides of the bowl periodically to ensure that all ingredients are combined.
  • Chill the dough in the refrigerator for at least one hour. To keep the dough from drying out cover with saran wrap or with a lid.

Baking Peanut Butter Thumbprint Cookies

  • After the dough has chilled preheat the oven to 375F. Place parchment paper onto the cookie sheet or use a cooking spray such as pam to ensure the cookies do not stick to the cookie sheet.
  • Measure out 1/2 cup of granulated sugar to dip the cookie dough into.
  • Using a medium sized cookie scoop measure out the cookie dough and roll it into a ball. Place each scoop of cookie dough into the granulated sugar. Once the dough ball is lightly coated in the sugar set it onto the cookie sheet with each dough ball 2 inches apart.
  • Place the cookie sheet with the dough into the pre-heated oven and bake for 10 minutes. While the cookies are in the oven measure out your jam of choice.
  • Remove the cookies from the oven and place the back of a small spoon onto the top of each cookie and lightly press down to make a small indentation. This should look like thumbprint. Be careful not to go to the bottom of the cookie.
  • Place a spoonful (about 1/2 a tablespoon) into the indentation of each cookie and return the cookies to the oven for 2 minutes or until the edges of the cookie are golden brown.
  • Cool the cookies on the cookie sheet for 5 minutes and then transfer them onto a wire rack to cool.

Tips and Tricks for perfecting these peanut butter and jelly cookies

To ensure that your Peanut Butter Thumbprint Cookies turn out perfectly every time, here are some helpful tips and tricks:

  1. Soften the butter: Make sure the butter is softened to room temperature before mixing it with the other ingredients. Softened butter incorporates more easily into the dough, resulting in a better texture.
  2. Use good quality peanut butter: The base of every peanut butter cookie is a high quality peanut butter. Opt for a creamy and smooth peanut butter that doesn’t separate easily. This will give your cookies a consistent texture and flavor.
  3. Chill the dough: If the dough is too soft and sticky, refrigerate it for 30 minutes to an hour before shaping it into balls. Chilled dough is easier to handle and holds its shape better.
  4. Experiment with different fillings: While traditional jam or jelly is a classic choice for the filling of thumbprint cookies, don’t be afraid to get creative. Try using Nutella, caramel, or even a dollop of chocolate ganache for a decadent twist.
  5. Customize the size: If you prefer smaller cookies, use a smaller cookie scoop or teaspoon to portion the dough. Just remember to adjust the baking time accordingly.
  6. Protect the jam filling: If you’re concerned about the jam spreading or bubbling over during baking, you can pre-bake the cookie bases for a few minutes before adding the filling. This will help set the edges and prevent any leakage.
  7. Be patient when cooling: Allow the cookies to cool completely on a wire rack before storing or serving. This will ensure that they set properly and maintain their shape.

Variations and Additions to Peanut Butter Thumbprint Cookies

While the classic combination of peanut butter and jam is undeniably delicious, there are endless possibilities for variations and additions to this thumbprint cookies recipe. Here are some creative ideas to take your cookies to the next level:

  1. Chocolate Lover’s Delight: Instead of using jam, fill the thumbprint indentations with a piece of your favorite chocolate. Dark chocolate, milk chocolate, or even white chocolate will add a rich and decadent twist to the cookies. I have a recipe for Peanut Butter Blossom Cookies that use a Hershey’s Kiss in the center.
  2. Nutty Indulgence: Sprinkle chopped nuts, such as peanuts or almonds, on top of the jam filling for an extra crunch and nutty flavor.
  3. Coconut Dream: Mix shredded coconut into the cookie dough for a tropical twist. Top the jam-filled cookies with a sprinkle of toasted coconut for added texture and flavor.
  4. Salted Caramel Surprise: Fill the thumbprint indentations with a small dollop of salted caramel sauce before baking. The combination of sweet and salty will take your cookies to new heights of indulgence.
  5. Spiced Sensation: Add a pinch of cinnamon or nutmeg to the cookie dough for a warm and cozy flavor. Pair the spiced cookies with a fruity jam, such as apple or pumpkin butter, for a delightful autumn-inspired treat.

Feel free to get creative and experiment with different flavors and fillings. The beauty of baking is that you can tailor the recipe to your personal preferences and create a truly unique cookie experience.

Health Benefits of Peanut Butter Thumbprint Cookies

While Peanut Butter Thumbprint Cookies are undoubtedly a delicious indulgence, they also offer some potential health benefits when consumed in moderation. While I know that it is a bit of a stretch to look at cookies as healthy here are some good justifications for giving these peanut butter cookies a try:

  1. Good Source of Protein: Peanut butter is rich in protein, which is essential for building and repairing tissues. Including peanut butter in your cookies adds a protein boost to your sweet treat.
  2. Healthy Fats: Peanut butter contains monounsaturated fats, which are considered heart-healthy fats. These fats can help lower bad cholesterol levels and reduce the risk of heart disease when consumed as part of a balanced diet.
  3. Vitamins and Minerals: Peanut butter is a good source of various vitamins and minerals, including vitamin E, magnesium, and potassium. These nutrients play important roles in maintaining overall health and wellbeing.
  4. Energy Boost: The combination of peanut butter and carbohydrates from the cookie base provides a quick and sustained source of energy. This makes these cookies a great option for a pre-workout snack or an afternoon pick-me-up.

Remember, moderation is key when enjoying any sweet treat. As long as you’re mindful of portion sizes and incorporate these cookies into a balanced diet, you can savor their deliciousness without guilt.

  2. Refrigerator: For longer storage, place the cookies in a sealed container and refrigerate for up to 2 weeks. The chilled cookies have a slightly different texture but are still delicious.
  3. Freezer: Peanut Butter Thumbprint Cookies can be frozen for up to 3 months. Place them in a freezer-safe container or freezer bag, making sure to remove as much air as possible. Thaw the cookies at room temperature before serving.

When ready to enjoy the cookies, you can serve them as is or warm them in the oven for a few minutes to restore their fresh-baked taste and texture.
