How To Make Pancakes With Muffin Mix
For this recipe I used an Electric Griddle. If you are using an electric griddle set the temperature to 300. If you are using a stove top frying pan or stove top griddle set the temperature to medium high heat.
This recipe is for a 6.4 or 7 ounce muffin mix. If you have a larger box of muffin mix or want to make more than you can. To double the recipe or to use a box of 14 ounce muffin mix simply double the milk and egg.
In a medium sized Mixing bowl add the egg and milk and whisk together completely. Add the dry muffin mix to the egg mixture and stir the ingredients together completely.

When the griddle is heated drop the butter onto the skillet and move it around to coat the skillet. The butter helps to keep the pancakes from sticking to the griddle and also adds extra flavor.
I like to use a 1/4 cup measuring cup as a scoop to transfer the muffin mix pancake batter to the griddle.
Let the pancakes heat until the edges appear done and the top starts to bubble. Use a spatula to lightly lift the pancake and see if it is lightly brown on the bottom.
If so then flip the pancake and let it cook for a minute on the other side before removing it from the griddle.

Continue this process until all of the muffin mix pancake batter is used and cooked.
