How To Make Mini Egg Cookie Bars
Spray a 8×8 inch baking dish with non-stick cooking spray like Pam Cooking Spray. I like to place two strips of parchment paper laid crossways into the 8×8 baking dish. This allows the Mini Egg Cookie Bars to cook in the baking dish without sticking to the bottom or the sides.
This also helps to remove the Mini Egg Cookie Bars from the baking dish once they have cooled.
Pre-heat the oven to 350 degrees F.

Mixing The Wet and Dry Ingredients
In a medium mixing bowl add the room temperature butter, firmly packed light brown sugar, and granulated sugar.

Add 1/2 cup of Cadbury Mini Eggs to a Ziploc sandwich bag and seal it completely. Using a wooden rolling pin pound on the mini eggs until they are broken and split into several pieces.
Add the broken Cadbury Mini Eggs and the milk chocolate chips to the cookie dough and stir it in .
Spoon the Mini Egg Cookie Bar dough into the parchment lined baking dish and spread it evenly.
Add the 1/2 cup of whole mini eggs and spread them evenly on top of the cookie dough.

Baking Mini Egg Cookie Bars
Place the Mini Egg Cookie Bars into the pre-heated oven for 25-28 minutes. Remove them from the oven when they become a golden brown color.
Keep in mind that each oven is different and some cook hotter than others. I start checking the cookie bars at 23 minutes to make sure that they do not burn.
