Mini Egg Brownie Ingredients
It is not possible to make mini egg chocolate brownies without mini eggs. I am a huge fan of Cadbury Mini Eggs and can admit without shame that I buy several giant bags a year. Thank you Costco for carrying them.
You are free to use whatever type of mini egg you want to add to these brownies however I highly recommend the Cadbury version.
INGREDIENTS
- 1/2 Cup Butter Melted
- 1 Cup Granulated Sugar
- 2 Large Eggs
- 1/2 Cup Unsweetened Cocoa
- 3/4 Cup All Purpose Flour
- 1/2 Tablespoon Pure Vanilla Extract
- 1/4 teaspoon Salt
- 3/4 Cup Cadbury Mini Eggs
RECOMMENDED EQUIPMENT
- 2 Medium Mixing Bowls: This is the perfect stackable mixing bowl set that comes with lids.
- 1 8×8 inch Baking Dish: I love that these Pyrex Baking Dishes come with a lid.
- Parchment Paper: This set comes in precut sheets that are perfect for baking.
- 1 Spatula
- 1 Rolling Pin
How To Make Mini Egg Brownies
Preheat Oven to 350 degrees F.
Spray a 8×8 Pyrex baking dish with a cooking spray and line it with either parchment paper or aluminum foil. If you do not have either one then make sure to spray the Pyrex well. This will help to keep the brownie mix from sticking to the baking dish.

The key to this recipe is mixing the wet and dry ingredients separately to avoid over mixing the batter.
To mix the wet ingredients melt the butter in a microwave and allow to cool to room temperature.
Combine the butter and the sugar and stir the two together completely.
Add one egg at a time to the butter and sugar mix and blend together.
Finally add the pure vanilla extract to the wet ingredients, mix completely and set aside.

To mix the dry ingredients add the flour, cocoa powder, then salt into a medium mixing bowl. Whisk the ingredients together making sure to break up solid pieces of the cocoa powder.
I like to spend a good minute breaking up the cocoa and making sure that it is well blended with the flour.

Add the dry ingredients to the wet ingredients and mix them until the wet and dry ingredients are just mixed together.
Do not over-mix the batter or you will have a thin dense brownie.
The batter will be thick but the result will be a thick fudgy brownie.
Place the Cadbury Mini Eggs into sealed Ziploc bag and lay them flat on a counter. Using a rolling pin hit the Mini Eggs breaking them up but not crushing them completely.
Add half over the contents of the bag of chopped up Mini Eggs to the Brownie Batter and gently fold them into the batter.

Baking Mini Egg Brownies
Using a spatula put the batter into the parchment lined 8×8 Pyrex baking dish. You will need to use the spatula to lightly move the batter around to the shape of the baking dish.
The brownie batter is thick so using a spatula is best to even the batter out.
Once the brownie batter has been spread out evenly in the baking dish place it into the 350 degrees Fairenheight preheated oven for 15 minutes.
After 15 minutes remove the brownies from the oven and sprinkle the remaining chopped Mini Eggs on top.
Place the mini egg brownies back into the oven for an additional 15 minutes.
During the last 15 minutes of cooking the brownies will continue to cook around the top layer of mini eggs securing them to the brownie.


Remove brownies from the oven and set them on the counter to cool for up to 2 hours prior to cutting.
If you are in a hurry placing them in the refrigerator for 1 hour also works.
Use a sharp knife to cut the brownies and Enjoy!
