- 1/2 Red Bell Pepper Chopped and Sautéed
- 1/2 Green Bell Pepper Chopped and Sautéed
- 1/4 Cup Taco Seasoning or 1 packet of Taco Seasoning
- 1 10 oz. Can Rotel Tomatoes and Green Chiles Drained
- 1 2 oz. Can Sliced Olives
- 1 Cup Canned Black Beans Drained
- 1 Large Tomato Diced or two small tomatoes diced
- 1/3 Cup Diced Green Onions
- 10 ounces Nacho Cheese Doritos Chips Lightly Crushed
- 2 Tbsp Oil

How To Make Dorito Casserole
In a large skillet cook the ground beef over medium heat until completely cooked through.
While the meat is cooking cut up the onion, red bell pepper, and green bell pepper.
In a medium skillet add 2 tablespoons oil and sauté the onion and peppers until the onions are translucent and the peppers are softened and beginning to get charred marks on them. This adds some flavor to this dinner recipe.

Once the meat is cooked all of the way through add the taco seasoning and stir it in completely.
Next remove the meat mixture from the heat and add the sour cream and mix it into the meat mixture.
Finally add the black beans, Rotel, sautéed onions and bell peppers. Mix the ingredients together completely.

Take a 9×13 inch baking dish and spray it with a non-stick cooking spray such as Pam.
The key to this dish is in the layers.
Take the Doritos chips and lightly crush them making sure to leave several medium size pieces. Spread 1 cup of the Doritos chips on the bottom of the baking dish being sure to cover the bottom evenly in chips.
Take the meat mixture and spoon half of it into the baking dish on top of the Doritos. Spreading it evenly ensure equal amounts across the baking dish.
Cover the meat mixture with 1/3 of the cheese making sure to cover the meat evenly.
Follow with another cup of the lightly crushed Doritos chips over the cheese.
Spoon the remaining meat mixture over the cheese spreading it out evenly in the baking dish.
Take 1/3 of the cheese mixture and sprinkle it over the top of the meat mixture.
