Ingredients For 2 Ingredient Lemon Bars

The beauty of this recipe is that it only requires 2 ingredients to make these Lemon Bars. I have added powdered sugar as it adds to the beauty and sweetness of the lemon bars when sprinkled on top. If you are a lemon lover you could add a tablespoon of lemon juice or lemon zest to add to the flavor of the bars.

  • 1 Box Angel Food Cake Mix this is the key ingredient in this recipe. It is absolutely possible to make lemon bars from a cake mix.

How To Make 2 Ingredient Lemon Bars

Preheat your oven to 350°F (175°C).

In a mixing bowl, combine the angel food cake mix with the can of lemon pie filling. I like to use a spatula to mix the two ingredients together.

Stir the ingredients together until they are well combined and there are no lumps and the batter is smooth.

Pour the mixture into a greased 9×13 inch baking dish.

Use the spatula to level out the batter until it is evenly distributed in the baking dish.

Bake in the preheated oven for about 30 minutes or until golden brown on top.

I like to test the lemon bars and ensure that they are cooked all of the way through. I do this by sticking a toothpick into a few places in the lemon bars.

If the toothpick comes out clean then I know that they are cooked through.

Remove from oven and let cool before slicing into squares. This takes about 30 minutes.

Once the squares are cut out I like to place them onto a cooling rack until completely cooled.

When the lemon bars have been on the cooling rack and have completely cooled I like to sprinkle them with powdered sugar.

How To Tell When Lemon Bars Are Done

So how do you tell when these 2 ingredient lemon bars are done? Here are some tips to help you get it right every time and make this the best lemon bars recipe you ever had:

  1. Check the color – The top of the lemon bars should be golden brown in color. If they look pale or white, they need to bake longer. I like to bake my lemon bars until the top is a light golden color.
  2. Shake the pan – Give your baking dish a gentle shake. If the center of the lemon bars looks jiggly or wobbly, they need more time in the oven.
  3. Use a toothpick – Insert a toothpick into the center of the bars and pull it out slowly. If there is wet batter on it, continue baking for another 5-10 minutes until no batter sticks to it. This is my preferred method to use.
  4. Look for cracks – Lemon bars will develop small cracks on their surface as they bake and set properly.
  5. Test with your finger – Gently press down on the top of your baked lemon bars with your finger – if it springs back up without leaving an indentation, then they should be done! Make sure not to stick your finger into the lemon bars just tap the top of them.

Remember that ovens vary, so keep an eye on your lemon bars throughout baking and adjust cooking times accordingly based on these guidelines!

How To Store Cake Mix Lemon Bars

If you have leftover cake mix lemon bars and don’t want to waste them, it’s important to know how to store them properly.

Here are some tips on how to store cake mix lemon bars:

  1. Allow the Bars To Cool Completely

Before storing your cake mix lemon bars, make sure they have cooled completely. This helps prevent moisture buildup inside the container and keeps the bars from becoming soggy.

  1. Choose an Airtight Container

The best way to preserve your cake mix lemon bars is by storing them in an airtight container. This prevents air and moisture from getting in and keeps the bars fresh for a longer period.

  1. Line The Container With Parchment Paper

To keep your 2 ingredient lemon bars from sticking to each other or the container, line the storage container with parchment paper before placing them inside.

  1. Store In The Refrigerator

If you plan on storing your cake mix lemon bars for more than two days, it’s best to refrigerate them. Wrap each bar individually in plastic wrap before placing them in an airtight container.

  1. Freeze For Long-Term Storage

For long-term storage (up to three months), freeze your cake mix lemon bars instead of refrigerating them. Wrap each bar individually in plastic wrap and then place them in an airtight freezer-safe container or Ziploc bag.
